I leave mine in the fridge. You must cover the container. It does not smell at all.

I grow some fruit and veg in my garden and had about 1/2lb. of redcurrants which I wasn’t sure what to do with. I ended up making a jelly (recipe on my blog) which was actually very nice and had it with a goats cream cheese (which I made from a goat’s yog. that had been in the fridge for a while!) – they went very well together – nice surprise! I will use the rest of the redcurrants to make some vinegar – thank you.

]]>Made raspberry and redcurrant vinegar last year, added a little sugar. To help dissolve the sugar I boiled the fruit vinegar, got a nice suprise when it cooled down and had turned into jelly.
Kerry the jelly sounds fantastic! I shall give that a go myself.
