However if you do sterilize the bottles or jars correctly and store the ketchup in a cool, dark and well ventilated space it should last for up to three months. I've tried growing courgettes but mine haven't grown properly yet. That said I have been picking some of the baby courgettes and stuffing the attached flowers with ricotta and goats cheese and then frying them as you have. Very envious of your courgette glut - most of ours are rotting off before they grow, although the handful that we have had are absolutely delicious. Think I might have to try making tomato ketchup - chilli sauce I've done several years running as we often have a glut of chillies, but not tried tomato sauce (probably cos we never manage to grow successful tomatoes).
