The inspiration for creating this recipe came from a suffering for a period of time of the flu. It feels if no medicine can cure, heal, relief and unblock the symptoms. All I can and could do is making a drink that is warm and soothing, the idea in itself made me feel a whole lot better indeed. Make a batch and drink what you can while it’s warm, chill the rest and reheat for a second self soothing session later on.
Ingredients & Method
- 1 tamarind pod, peeled
- 1 stick of lemongrass, roughly chopped
- 1 vanilla pod, split in half
- 30g fresh ginger, sliced + 10g fresh ginger slices for serving
- 150g caster sugar
- 150ml water
- 1 lime, cut in quarters
- 550ml Fentimans Botanically Brewed Traditional Ginger Beer
- Sprigs of fresh mint, to serve
Place the peeled tamarind, vanilla pod, lime quarters, sugar, water and lemongrass pieces in a small saucepan.
Heat over low heat to dissolve the sugar, rub the tamarind with the back of a spoon to mash it up slightly.
Once the sugar has dissolved remove the pan from the heat and set aside for 10 minutes to infuse.
Add the ginger beer, bring the infusion back to boil over medium heat, once it starts to simmer, remove from the heat, pass the infusion through a fine sieve and serve in a glass or cup with fresh mint leaves and a few slices of fresh ginger.
Sip and feel the relief!
