It’s something of a family tradition for us to have gravadlax every Christmas. I tried to get Dad to make a beetroot and gin spiked one, but he refuses to deviate from the classic! Yours looks fantastic, great colour.

Yet another stimulating post – thanks, it really looks a treat. Every component is fantastic. Love the little spelt loaves. Congratulations.

I first read McGee;s book in 1994 and it really changed my thinking. with regards to cooking. Having a scientific background and always wanting to know Why?

Keller’s book is part of the living room coffee table because the cover suits the decor with the red (?rhubarb)

Does anybody know where beetroor marinated salmon originated from ? It is on lots of menus down here in Australia. Even the local that I help out in has it on the regular menu.

Oh, and I guess I think the Thermomix is pretty good, but also love my microplanes.
